—This blog began as a side project when we opened Nook Eatery in 2009. In September 2012 we sold Nook, and sadly it now no longer exists. We have a new blog (see A Good Place to Gather). As always we remain inspired by the ingredients we use and the food we cook. This site remains purely as an archive of our three years at Nook Eatery and the recipes I created.
Quesadillas!
Too tired and too lazy to put much effort into making dinner last night, Luke had the brilliant idea to make quesadillas (our version of anyway). So quick, so very tasty. And vegetarian!
ingredients
120g strong cheddar (or Manchego), grated
1 chilli, deseeded and chopped
1/2 bunch coriander, leaves picked
1 red and 1 yellow pepper, finely chopped
4 large flour tortillas
To assemble, mix the peppers, chilli and coriander with the cheddar. Scatter across two tortillas, then top with the remaining tortillas.
Cook in a non-stick pan for 2-3 minutes each side, or till the tortillas are golden and the cheese melted.
Cut into quarters and serve with your choice of sides. We made Guacamole and also dished up some sour cream with lime.
guacamole
2 ripe avocados, halved and stoned
1/2 bunch coriander, leaves picked
1/2 red onion, finely chopped or grated
1 chilli, deseeded and chopped
juice of 1 to 2 limes
2 ripe tomatoes, roughly chopped
maldon sea salt and cracked black pepper
Squeeze the avocado flesh into a bowl. Add the coriander, onion, chilli and lime juice. Add the tomatoes.
Mix well with a fork or masher. Season.
