Perfect Eggy

I often have people asking what extra ingredient I put into my scrambled eggs.  Is it cream?  An extra yolk maybe?  The secret is in the way you cook your eggs, and even better if you use quality ingredients.

We recently discovered Spier BD Farm and their free range eggs.  Luke and I visited one afternoon, and had the opportunity to meet the hens (who were the happiest, friendliest little chickens I had ever encountered), as well as look at their specially designed mobile houses.  This unique system allows them to move their chickens to fresh pastures throughout the day.  Chickens should not be allowed to range on the same piece of land indefinitely.  The result would be a deterioration in the grass, as well as a gradual increase in the incidence of pests and parasites – making the need for hormone and antibiotic injections necessary.

These eggs are truly free range and truly tasty!

To prepare the perfect eggy breakfast you need a good non-stick pan and a flexible spatula.

INGREDIENTS (makes 2 portions)

* purely optional, as cooking your eggs in a folding manner will render them creamy without the addition of cream

METHOD

- Place eggs and cream in a bowl and whisk together.

- Melt butter in a non-stick pan over a low to medium heat.

- Pour in the egg mixture and allow to cook until the egg starts to gently set around the edge.

- Stir the eggs with the spatula, gently bringing the egg mixture on the outside of the pan to the centre.  The idea is to fold the egg rather than scramble it.

-  Allow the eggs to cook for a further 20 seconds, repeating the folding process every few seconds.

- Cook the eggs until they are just set (don’t be tempted to cook further as the eggs continue to cook in the pan).  At this stage season with salt and pepper.

Notes:

If you are cooking more than two servings of scrambled eggs, make sure you cook separate batches as you do not want to overcrowd the pan.

Turn out onto plates and serve with hot buttered toast and fresh rocket.
