Love and Sugar Cookies

It’s February 14th, and I’ve been baking up an assortment of treats for Valentines Day.  So come visit us at Nook and spoil yourself with a heart shaped cookie made with love!

I have been making these cookies since I can remember.

My Mother’s Sugar Cookie Recipe

• 190g unsalted butter
• 1/2 cup sugar
• 1 egg
• 2 1/2 cups all purpose flour
• scant teaspoon salt
• vanilla essence *optional

- Cream the butter and sugar together until light.  Add the egg and mix to combine.

- Sift in the flour and salt, and mix just until it all comes together and a dough is formed.  Wrap and rest in the fridge for 30 minutes.

- Roll the dough out on a floured surface and cut using desired cookie cutter shapes.  Place on a greased or lined baking tray, and refrigerate for 30 minutes (this prevents them from spreading when baking).

- Bake in a preheated oven at 180 degrees for 12 – 15 minutes, or until just golden around the edges.

- Decorate with royal icing.
